East Tyrolean Stone Flour Mill!
As artisan bakers we wanted to get as close to the source of our ingredients as possible, which is why there is an onsite Osttiroler stone-grinding flour mill from Austria which has a 3-compartment sifter and can mill 200 lbs of flour an hour. The Green family are the only ones who make these beautiful mills and have been creating them for over 80 years.
The custom handcrafted mill is itself a work of art. The mill is crafted out of solid pine based on a centuries-old design. The 20-inch self-sharpening grinding stone is from the Greek island of Naxos and is ideal for use in the cold milling process, which retains the organic grain’s natural flavor.
Artisan millers have been using slow food methods for generations, and the finest quality flours come from slow horizontal stone mills. While these mills are quite a bit more expensive than the standard vertical high-speed industrial mills, it’s definitely worth the expense. Freshly milled organic grits, polenta and custom grain flour mixes are available for our chef clients and both organic yellow, organic blue and organic white corn grits are available for sale to the public on our Saturday retail day. As a true artisan bakery we want to use the very best ingredients possible, and what better way to control the quality of our whole grain flours than to have them milled on-site?
