Our Philosophy
Grateful Bread Company is a local, family-owned Denver bakery. Our artisan bakers take pride in handcrafting our breads and pastries to ensure that we are creating the most authentic breads and pastries possible. We use only the finest organic and natural ingredients in every single one of our products, such as organic whole grain flours that are milled on a beautiful solid pine East Tyrolean stone mill. We also use fresh honey from a three-generations-old family of Colorado beekeepers, and milk, eggs, and butter from a local dairy. All of our ingredients are non-GMO, and we are in the process of partnering with local Colorado farmers to obtain organic heirloom grains to mill for our bread and for flour to sell to chefs and home bakers in the community as well as local Colorado stone-ground grits.
At Grateful Bread, we’re passionate about quality. Every piece of bread is painstakingly handcrafted in true artisan style. We don't use yeast accelerants, dough conditioners, preservatives, artificial flavors or colors, stabilizers, "enhancers", "improvers" or any additives to cut corners. We write all of our own formulas and develop our own starters, maintaining many different starters on any given day, including our 24-year-old natural wild yeast sourdough starter. Each starter is made specifically for a certain type of dough, which gives each bread its own unique, complex flavor. We are constantly working to produce the optimal environment for the yeast through temperature and humidity control, using different mixing processes and autolyses for each type of bread.
Bread dough is alive and needs nurturing from start to finish - the process can't be artificially rushed, and because of that, many of our breads take up to 3 days to make. We give every dough the time it needs to ferment properly as nature intended and the time to rise naturally in order to extract the full flavor from the grains, giving our bread its distinctive crust, crumb, depth and character.
Our primary focus is on quality, freshness, and consistency, and our authentic old-world style bread is baked fresh every single day. In fact, much of our bread is offered for sale at retail and delivered to restaurants still hot from the oven.
Grateful Bread offers a wide variety of handmade artisan breads and pastries for sale to the public every Saturday on our retail day. We appreciate the overwhelming support we have received from the community for our retail days.
We also provide bread for many of the best restaurants and hotels in Denver, clients who appreciate the effort that goes into producing a consistently high-quality handcrafted product every day from scratch. Bread is often the first impression a customer receives in a restaurant. We are fortunate to work with chefs who are as committed to quality as we are, and we create breads which complement their individual cuisines, support the concepts of their restaurants, and convey their commitment to using only the very best ingredients.
